摘 要:隨著人們對食品安全關(guān)注的日益增加,電位滴定法因具有操作簡單、特異性強(qiáng)、易于實現(xiàn)自動化等優(yōu)點而被廣泛用于食品分析。本文簡述了電位滴定法的工作原理、儀器構(gòu)成,論述了其在食品中碘、二氧化硫殘留量、過氧化值、酸價、維生素C以及脂肪酸值等檢測中的應(yīng)用。

Application of Potentiometric Titration in Food Safety Detection

Abstract: With the increasing attention to food safety, potentiometric titration is widely used in food analysis because of its advantages of simple operation, strong specificity and easy automation. This paper briefly introduces the working principle and instrument composition of potentiometric titration, and discusses its application in the detection of iodine, sulfur dioxide residues, peroxide value, acid value, vitamin C, fatty acid value, etc. in food.
