數(shù)學(xué)算法在白酒勾調(diào)中的應(yīng)用研究進(jìn)展
摘 要:本文綜述了線性規(guī)劃、目標(biāo)規(guī)劃、模糊數(shù)學(xué)、神經(jīng)網(wǎng)絡(luò)和遺傳算法等數(shù)學(xué)算法在白酒勾調(diào)中的應(yīng)用研究現(xiàn)狀,旨在實(shí)現(xiàn)酒體質(zhì)量穩(wěn)定、感官評分高、勾調(diào)成本低、勾調(diào)效率高和勞動(dòng)強(qiáng)度小的效果,以及為白酒勾調(diào)領(lǐng)域研究人員提供借鑒。

Abstract: In this paper, the application of mathematical algorithms such as linear programming, goal programming, fuzzy mathematics, neural network and genetic algorithm in wine blending was reviewed, aiming to achieve stable wine body quality, high sensory score, low cost, high efficiency and low labor intensity, and to provide reference for researchers in the field of wine blending.

中國白酒釀制技藝歷經(jīng)千年積淀、傳承和改進(jìn),已發(fā)展形成了十二大香型瀘州老窖等多家白酒名企的傳統(tǒng)釀制技藝,且均入選了國家非物質(zhì)文化遺產(chǎn)[1-2],白酒勾調(diào)技藝是其核心技藝之一。(剩余5589字)
