淀粉與非淀粉多糖復(fù)合可食用膜研究進(jìn)展
摘 要:食用膜具備良好的機(jī)械性能、水溶性和透氣性,能有效延長食品保鮮期,還具有抗氧化和抗菌性能,有助于保持食品的新鮮度和衛(wèi)生安全。在預(yù)制菜、肉類、水果和糕點(diǎn)等食品的包裝和保鮮中,復(fù)合膜發(fā)揮著重要作用。本文探討了淀粉與非淀粉多糖可食用膜性能與應(yīng)用的研究進(jìn)展。

Research Progress on Properties and Applications of Edible Film of Starch and Non-Starch Polysaccharides

Abstract: Edible film has good mechanical properties, water solubility, and breathability, which can effectively extend the shelf life of food. It also has antioxidant and antibacterial properties, helping to maintain the freshness and hygiene safety of food. Composite films play an important role in the packaging and preservation of pre made vegetables, meat, fruits, and pastries. This paper discusses the progress of research on the properties and applications of starch and non-starch polysaccharide edible films.
