摘 要:食物中的蛋白質(zhì)經(jīng)過物理性、化學(xué)性消化后,以氨基酸或寡肽的形式在小腸被吸收。進入人體內(nèi)的氨基酸或寡肽,可以重新組成人體細胞組織結(jié)構(gòu)并發(fā)揮重要生物學(xué)作用或生物學(xué)功能,部分寡肽也可能引發(fā)食物蛋白質(zhì)過敏反應(yīng)等不良影響。

Abstract: After the protein in food is digested physically and chemically, it is absorbed in the small intestine in the form of amino acids or oligopeptides. The amino acids or oligopeptides that enter the human body can recombine the structure of human cell tissues and play an important biological role or biological function. Some oligopeptides may also cause adverse effects such as food protein allergic reactions.
