摘 要:野菜營養(yǎng)價值豐富,含有多種有益于人體健康的活性成分。許多野菜兼具食用價值和藥用價值,因此研究野菜的營養(yǎng)及功能性成分具有重要意義。本文對野菜的營養(yǎng)成分、功能性成分與功效以及野菜的食用方法進行了綜述,以期為今后野菜營養(yǎng)相關(guān)研究以及野菜產(chǎn)品開發(fā)提供參考。

Research on the Nutritional and Functional Composition of Wild Vegetables

Abstract: Wild vegetables are rich in nutritional value and contain a variety of active ingredients that are beneficial to human health. Many wild vegetables have both food value and high medicinal value, so it is important to study the nutritional and functional components of wild vegetables. In this paper, the nutritional composition, functional composition and efficacy of wild vegetables as well as the edible methods of wild vegetables are reviewed, with a view to providing references for future research on the nutritional aspects of wild vegetables as well as the development of wild vegetable products.
