椰毒假單胞菌酵米面亞種滅活條件研究

摘 要:目的:降低濕米粉中椰毒假單胞菌酵米面亞種污染風(fēng)險(xiǎn),防止?jié)衩追勖捉途嶂卸臼录l(fā)生。方法:采用加熱和紫外的方法對(duì)椰毒假單胞菌酵米面亞種的滅活條件進(jìn)行研究。結(jié)果:加熱和紫外均可以殺滅椰毒假單胞菌酵米面亞種。結(jié)論:濕米粉企業(yè)可以使用加熱或紫外的方法來防止產(chǎn)品被椰毒假單胞菌酵米面亞種污染。

Abstract: Objective: Reduce the pollution risk of contamination of Pseudomonas cocovenenans subsp. farinofermentans in fresh rice vermicelli, prevent poisoning incidents caused by bongkrekic acid from fresh rice vermicelli. Method: Study on inactivation parameters to Pseudomonas cocovenenans subsp. farinofermentans by heat and UV irradiation. Result: Pseudomonas cocovenenans subsp. farinofermentans can be killed completely by heat and UV irradiation. Conclusion: Fresh rice vermicelli enterprises can use both two methods to prevent pollution of Pseudomonas cocovenenans subsp. farinofermentans.
