微波技術(shù)在食品加工中的應(yīng)用
摘 要:近年來,微波技術(shù)在我國民用領(lǐng)域的運用范圍越來越廣,對國內(nèi)食物加工能力的提高有著重要的影響。相較于傳統(tǒng)技術(shù),微波技術(shù)具有高效、節(jié)約資源、便捷、干凈、營養(yǎng)成分流失少、升溫快和溫度高等優(yōu)勢,對于食物加工行業(yè)具有重要的意義?;诖耍疚膶ξ⒉夹g(shù)在食品加工中的應(yīng)用進(jìn)行了研究。

Application of Microwave Technology in Food Processing

Abstract: In recent years, microwave technology has been used more and more widely in China’s civil field, which has an important impact on the improvement of domestic food processing capacity. Compared with traditional technology, this technology has the advantages of high efficiency, resource saving, convenience, cleanliness, less loss of nutrients, fast heating and high temperature, which is of great significance to the food processing industry. Based on this, this paper studies the application of microwave technology in food processing.

微波的頻率通常為300 MHz~300 GHz,我國普通微波儀器的頻率通常為245 GHz,對于工業(yè)領(lǐng)域使用的微波,其頻率則為915 MHz或者245 GHz。(剩余3725字)
