摘 要:高校食堂具有原料種類多、客流量大且集中、烹調(diào)方法多樣以及工藝流程復(fù)雜等特點(diǎn)。為了保證師生的飲食安全衛(wèi)生,規(guī)范食堂的日常管理,高校食堂食品衛(wèi)生和安全監(jiān)管問題的研究具有重要現(xiàn)實(shí)意義。

Abstract: College cafeterias are characterized by many kinds of raw materials, large and concentrated customer flow, various cooking methods and complex processes. In order to ensure the dietary safety and hygiene of teachers and students and regulate the daily management of canteens, the study of food hygiene and safety supervision in college canteens is of great practical significance.
