我國預(yù)制菜產(chǎn)業(yè)的發(fā)展現(xiàn)狀、面臨問題及未來展望
摘 要:隨著餐飲市場的降本增效和人們生活節(jié)奏的加快,預(yù)制菜成為眾多家庭和餐飲企業(yè)的選擇。本文概述了預(yù)制菜的定義和發(fā)展現(xiàn)狀,并剖析了當(dāng)前預(yù)制菜產(chǎn)業(yè)在原材料、標(biāo)準(zhǔn)制定、消費(fèi)者認(rèn)知和政策方面面臨的問題,同時提出了解決這些問題的有效對策,以供參考。

The Development Status, Problems and Future Prospects of China’s Prefabricated Food Industry

Abstract: With the cost reduction and efficiency increase of the catering market and the acceleration of people’s life rhythm, prefabricated dishes have become the choice of many families and catering enterprises. This paper summarizes the definition and development status of prefabricated food, analyzes the current problems faced by the prefabricated food industry in terms of raw materials, standard setting, consumer cognition and policies, and puts forward effective countermeasures to solve these problems for reference.

1 預(yù)制菜概述
1.1 預(yù)制菜定義及特點(diǎn)
2024年3月18日,市場監(jiān)管總局、教育部、工業(yè)和信息化部、農(nóng)業(yè)農(nóng)村部、商務(wù)部、國家衛(wèi)生健康委六部門聯(lián)合印發(fā)《關(guān)于加強(qiáng)預(yù)制菜食品安全監(jiān)管 促進(jìn)產(chǎn)業(yè)高質(zhì)量發(fā)展的通知》(國市監(jiān)食生發(fā)〔2024〕27號),明確預(yù)制菜也稱預(yù)制菜肴,是以一種或多種食用農(nóng)產(chǎn)品及其制品為原料,使用或不使用調(diào)味料等輔料,不添加防腐劑,經(jīng)工業(yè)化預(yù)加工(如攪拌、腌制、滾揉、成型、炒、炸、烤、煮、蒸等)制成,配以或不配以調(diào)味料包,符合產(chǎn)品標(biāo)簽標(biāo)明的貯存、運(yùn)輸及銷售條件,加熱或熟制后方可食用的預(yù)包裝菜肴,不包括主食類食品,如速凍面米食品、方便食品、盒飯、蓋澆飯、饅頭、糕點(diǎn)、肉夾饃、面包、漢堡、三明治以及比薩等。(剩余4744字)
