黑米花青素生物活性研究進(jìn)展

摘 要：黑米含有花青素等生物活性物質(zhì)，在我國(guó)種植廣泛、產(chǎn)量較高。本文主要簡(jiǎn)述了黑米花青素的抗氧化、抗腫瘤、抗菌、調(diào)節(jié)血脂、增強(qiáng)視力、保護(hù)肝臟、抗哮喘、預(yù)防動(dòng)脈粥樣硬化等生物活性，為黑米及黑米花青素的產(chǎn)品研發(fā)提供理論依據(jù)。

Research Progress on the Bioactive of Anthocyanins in

Black Rice

Abstract： Black rice contains anthocyanins and other bioactive substances， which are widely cultivated in China with high yield. In this paper， the effects of black rice anthocyanins on oxidation， anti-tumor， anti-bacteria， regulation of blood lipids， enhancement of vision， protection of liver， anti-asthma， prevention of atherosclerosis were briefly described， providing a theoretical basis for the development of black rice and black rice anthocyanins.
