摘 要:隨著現(xiàn)代食品加工方法的不斷發(fā)展和人們對健康的日益重視,研發(fā)針對特定人群的營養(yǎng)食品已成為食品工業(yè)的重要發(fā)展方向。本文分析特定人群的營養(yǎng)需求,闡述針對嬰幼兒、老年人、運動員和慢性病患者等特定人群的食品加工方法以及評估加工方法對特定人群健康的影響。

Nutritional Food Processing Methods for Specific Populations and Their Health Impact Assessment

Abstract: With the continuous development of modern food processing methods and people’s increasing attention to health, research and development of nutritious food for specific people has become an important development direction of the food industry. This paper analyzes the nutritional needs of specific groups, and describes the food processing methods for specific groups such as infants, the elderly, athletes and patients with chronic diseases, and assesses the impact of processing methods on the health of specific groups.
