智能化技術(shù)在高校餐飲服務(wù)及管理中的應(yīng)用
摘 要:隨著我國(guó)信息化建設(shè)的不斷推進(jìn)和信息技術(shù)的廣泛應(yīng)用,智能化技術(shù)已逐漸被運(yùn)用到高校管理的各個(gè)領(lǐng)域,將智能技術(shù)應(yīng)用于高校餐飲服務(wù)與管理是促進(jìn)高校餐飲改革與發(fā)展的重要舉措。本文分析了智能化技術(shù)在高校餐飲服務(wù)及管理中應(yīng)用的必要性,并針對(duì)性提出智能化技術(shù)在高校餐飲服務(wù)及管理中的應(yīng)用途徑。

Abstract: With the continuous promotion of China’s information construction and the wide application of information technology, intelligent technology has been gradually applied to various fields of university management, applying intelligent technology to catering service and management in colleges and universities is an important measure to promote the reform and development of catering in colleges and universities. This paper analyzes the necessity of applying intelligent technology in catering service and management in colleges and universities, it also puts forward the application ways of intelligent technology in college catering service and management.

1 智能化技術(shù)在高校餐飲服務(wù)及管理中應(yīng)用的必要性
隨著我國(guó)社會(huì)經(jīng)濟(jì)持續(xù)快速發(fā)展,高校辦學(xué)規(guī)模不斷擴(kuò)大,學(xué)生人數(shù)逐漸增加,師生對(duì)飲食的要求越來(lái)越高,供餐品種多樣化需求不斷提高;原材料、水電能源價(jià)格、人工成本加速上升使得飯菜價(jià)格和飯菜質(zhì)量難以把控;大學(xué)生生活節(jié)奏的加快使得餐飲管理人員跟不上學(xué)生的飲食需求;校園周邊餐飲業(yè)火爆興起沖擊著校園食品安全;蔬菜農(nóng)殘檢測(cè)及追溯難度較大;餐飲具洗消后的化學(xué)殘留及洗凈度檢測(cè)跟不上食品安全需要;食品材料存儲(chǔ)管控效率低存在食品安全隱患;餐飲服務(wù)全流程督查檢查廣度和深度不夠;大學(xué)生維權(quán)意識(shí)增強(qiáng)對(duì)食品安全投訴越來(lái)越多;餐廳從業(yè)人員文化水平參差不齊,服務(wù)水平提高難度大;餐飲浪費(fèi)現(xiàn)象嚴(yán)重;餐廚垃圾未能得到有效處理污染環(huán)境等問(wèn)題不斷凸顯,傳統(tǒng)的經(jīng)驗(yàn)式的餐飲管理已經(jīng)不能滿足現(xiàn)代餐飲服務(wù)需求[1]。(剩余3913字)
