摘 要:蘆筍因富含多種營養(yǎng)成分且具有保健功能,成為近年來的研究熱點(diǎn)。本文綜述了蘆筍的營養(yǎng)保健作用及近年來的蘆筍加工研究進(jìn)展,為蘆筍產(chǎn)業(yè)的發(fā)展提供參考。

Abstract: Asparagus has become a research hotspot in recent years because it is rich in various nutrients and has health-care functions. This paper reviews the nutritional and health care effects of asparagus and the research progress of asparagus processing in recent years, in order to provide reference for the development of asparagus industry.
