不同包裝方式對山核桃仁貯藏期品質(zhì)的影響研究

摘 要:以山核桃仁為研究對象,選擇鋁箔袋、熱封袋、扎口袋3種不同包裝方式,研究貯藏期間過氧化值、酸價、感官品質(zhì)的變化規(guī)律。結(jié)果表明,包裝方式對山核桃仁貯藏期品質(zhì)劣變有重要的影響,同時可根據(jù)產(chǎn)品貯藏周期的要求選用不同的包裝方式。研究結(jié)果可為山核桃仁產(chǎn)品的貯藏保鮮處理提供參考。

Study on the Effect of Different Packaging Methods on the Quality of Hickory Kernel During Storage

Abstract: This experiment took hickory kernel as the object, and chose three different packaging methods, including aluminum foil bag, heat sealing bag and tied bag, to study the changes of peroxide value, acid value and sensory quality over time during storage. The results showed that packaging methods had an important impact on the quality deterioration of pecans during storage, and different packaging methods could be selected according to the requirements of the product storage cycle. The results could provide reference for the storage and fresh-keeping treatment of hickory kernel.
