靈芝活性成分及深加工食品研究進(jìn)展

摘 要:靈芝的營養(yǎng)價值極高,富含多糖、三萜類化合物、甾醇和生物堿等多種活性成分。近年來,靈芝在功能性食品方面的開發(fā)日益廣泛。本文概述靈芝的活性成分及其營養(yǎng)價值,總結(jié)我國靈芝深加工食品的研究現(xiàn)狀,分析目前其在加工生產(chǎn)中存在的問題,并提出今后的發(fā)展方向,以期為靈芝深加工食品產(chǎn)業(yè)的發(fā)展提供參考。

Abstract: Ganoderma lucidum has high nutritional value, rich in polysaccharides, triterpenoids, sterols and alkaloids and other active ingredients. In recent years, Ganoderma lucidum has been widely developed in functional foods. This paper summarized the active ingredients and nutritional value of Ganoderma lucidum, summarized the research status of Ganoderma lucidum deep-processed food in China, analyzed the existing problems in processing and production, and proposed the future development direction, in order to provide reference for the development of Ganoderma lucidum deep-processed food industry.
