高溫烹飪方法對(duì)食品安全性的影響研究
摘 要:高溫烹飪?cè)谔嵘澄锔泄倨焚|(zhì)的同時(shí),引發(fā)了人們對(duì)食品安全的擔(dān)憂。本文探討高溫烹飪過程中的主要化學(xué)反應(yīng)類型,分析高溫烹飪方法對(duì)食品安全性的影響,提出高溫烹飪方法以提高食品安全性的策略,旨在最大限度地保留食物的營養(yǎng)價(jià)值,降低有害物質(zhì)的生成,保障消費(fèi)者的健康。

Study on the Influence of High-Temperature Cooking Methods on Food Safety

Abstract: High temperature cooking has raised concerns about food safety while improving the sensory quality of food. This paper discusses the main chemical reaction types in the process of high temperature cooking, analyzes the influence of high temperature cooking methods on food safety, and puts forward the strategy of high temperature cooking methods to improve food safety, aiming at maximizing the retention of nutritional value of food, reducing the generation of harmful substances, and protecting the health of consumers.
