摘 要:姜埋奶是以新鮮牛奶和現(xiàn)榨姜汁為主要原料制成的一種傳統(tǒng)名優(yōu)小吃。本文對傳統(tǒng)姜埋奶的原材料選擇、制作工藝與凝結(jié)原理進行了分析和研究,并分析了姜埋奶的現(xiàn)代制作工藝與傳統(tǒng)制作異同和優(yōu)缺點。

Processing Technology of Shawan Ginger Milk

Abstract: Ginger milk is a traditional famous snack made from fresh milk and fresh ginger juice. This paper analyzes the selection of materials, processing technology and coagulation principle of ginger milk. Besides, the similarities and differences, advantages and disadvantages between the modern processing technology and the traditional processing technology of ginger milk were analyzed.
