摘要:在25 ℃貯藏條件下,以未涂膜的半干型風(fēng)干牛肉為對(duì)照組,用1.5%殼聚糖、0.5%、1.0%、1.5%刺玫果提取物和1.0% 2,6-二叔丁基對(duì)甲酚(butylated hydroxytoluene,BHT)復(fù)配涂膜的半干型風(fēng)干牛肉為處理組,利用水分含量、色度、過(guò)氧化值、pH值、硫代巴比妥酸反應(yīng)物(thiobarbituric reactive substances,TBARS)值、揮發(fā)性鹽基氮(total volatile basic nitrogen,TVB-N)值、菌落總數(shù)表征半干型風(fēng)干牛肉在貯藏第0,3,6,9,12天時(shí)的品質(zhì)變化。(剩余13467字)
