魔芋深加工與食品開(kāi)發(fā)研究進(jìn)展
摘 要:魔芋是我國(guó)特色植物資源,含有豐富的葡甘聚糖,可進(jìn)一步深加工成魔芋精粉、魔芋凝膠類食品、魔芋保健類食品等。本文綜述了市面上常見(jiàn)的魔芋深加工類食品及魔芋食品開(kāi)發(fā)研究進(jìn)展,以期為魔芋深加工研究及產(chǎn)業(yè)化發(fā)展提供理論參考。

Research Progress of Konjac Deep Processing and Food Development

Abstract: Konjac is a characteristic plant resource in China, rich in glucomannan, can be further processed into konjac powder, konjac gel food, konjac health food, etc. This paper reviews the common konjac deep processing of food products on the market and the progress of research on the development of konjac food, in order to provide theoretical reference for the deep processing of konjac research and industrial development.
