中餐預(yù)制菜的營養(yǎng)價值與食品安全問題探析
摘 要:中餐預(yù)制菜是指經(jīng)過初步加工處理后,消費者僅需簡單加熱或調(diào)味即可食用的中餐食品。隨著其市場需求的增加,預(yù)制菜的營養(yǎng)成分保留及食品安全問題日益受到關(guān)注。本文系統(tǒng)分析中餐預(yù)制菜的核心營養(yǎng)成分及其在加工過程中的變化,探討中餐預(yù)制菜中的常見食品安全問題,提出改善中餐預(yù)制菜營養(yǎng)價值與食品安全的對策。

Analysis on the Nutritional Value and Food Safety of Chinese Prepared Dishes

Abstract: Chinese prepared dishes refer to the Chinese food that can be eaten by consumers simply by heating or seasoning after preliminary processing. With the increase of market demand, the nutrition retention and food safety of prepared dishes have been paid more and more attention. This paper systematically analyzed the core nutrients of Chinese prepared dishes and their changes during processing, discussed the common food safety problems in Chinese prepared dishes, and proposed countermeasures to improve the nutritional value and food safety of Chinese prepared dishes.
