天然植物花色苷研究進展
摘 要:花色苷是花青素的顯色成分,存在于很多植物體內(nèi),具有抗氧化活性、抗癌、抗肥胖等作用。本研究概述了花色苷的分布、提取方式、鑒別及定量分析、生物學特性研究進展,并展望了花色苷在食品中的應(yīng)用。

Abstract: Anthocyanins are the chromogenic components of anthocyanins, which exist in many plants and have antioxidant activity, anti-cancer, anti-obesity and other effects. In this study, the distribution, extraction, identification, quantitative analysis and biological characteristics of anthocyanins were summarized, and the application of anthocyanins in food was prospected.
