天然植物花色苷研究進展

摘 要：花色苷是花青素的顯色成分，存在于很多植物體內(nèi)，具有抗氧化活性、抗癌、抗肥胖等作用。本研究概述了花色苷的分布、提取方式、鑒別及定量分析、生物學特性研究進展，并展望了花色苷在食品中的應(yīng)用。

Abstract： Anthocyanins are the chromogenic components of anthocyanins， which exist in many plants and have antioxidant activity， anti-cancer， anti-obesity and other effects. In this study， the distribution， extraction， identification， quantitative analysis and biological characteristics of anthocyanins were summarized， and the application of anthocyanins in food was prospected.
