Abstract: As a key aspect of food safety monitoring, the quality of grain and oil is directly related to public health and safety. In order to effectively detect fungal toxins and ensure food safety, it is necessary to conduct in-depth research on the detection technology of fungal toxins in grain and oil. Therefore, this article introduces common fungal toxins in grain and oil products, analyzes the characteristics of traditional and modern fungal toxin detection techniques, and aims to provide theoretical reference for the application and development of grain and oil fungal toxin detection technology.
