摘要 滇紅工夫茶選用芽葉肥壯的云南大葉種茶樹(shù)鮮葉作為原料,制出的紅茶金毫特顯,香高味濃,湯色紅艷明亮,茶多酚、咖啡堿、水浸出物等含量高??偨Y(jié)了滇紅工夫茶加工技術(shù)的發(fā)展及關(guān)鍵技術(shù),旨在為生產(chǎn)者在技術(shù)繼承、產(chǎn)品質(zhì)量提升和加工技術(shù)創(chuàng)新方面提供借鑒。

Development and Key Processing Technologies of Yunnan Gongfu Black Tea

Abstract Yunnan Gongfu Black Tea is made of the fat buds and bold with leaves of Yunnan large leaf tea tree. The produced black tea has a special golden millimeter, high fragrance and strong flavor,red and bright soup color, and high content of tea polyphenols, caffeine, and water extracts.This paper summarized the development and key processing technologies of Yunnan Gongfu Black Tea, so as to provide references for manufacturers in the technology inheritance, product quality’s improvement and the innovation of processing technology.

云南茶區(qū)1938年前只生產(chǎn)青毛茶,屬綠茶類(lèi),鮮葉攤放后高溫殺青,手工揉制為散茶,茶商到產(chǎn)區(qū)設(shè)點(diǎn)收購(gòu),馱運(yùn)到茶葉集散市場(chǎng),設(shè)廠壓制成各種“緊形茶”以便運(yùn)銷(xiāo),年產(chǎn)量400余t。(剩余13302字)
